Mayfield Heights Micro-bakery Explodes in Popularity with Just Two Hours a Week

MAYFIELD HEIGHTS, Ohio — Flour Child Microbakery owner Anna Coumos is building a loyal following in Mayfield Heights through weekly pop-up sales, preorders, and word of mouth, operating from her home on Bonnie Lane. "I've been baking probably since I was five," Coumos said, recalling how she learned alongside her nine siblings after their mother taught them to bake at a young age.
The bakery has been operating for just over a year and has steadily grown through community recommendations rather than traditional advertising. Coumos said she rarely participates in markets, instead relying on customers to spread the word. She recently handed out cookies, business cards, and coupons during the city's Flag Day parade, helping introduce more residents to the business.
Flour Child Microbakery is open on Saturdays from 9 a.m. to 11 a.m., while customers can also place preorders throughout the week. Coumos spends the rest of the week preparing for the Saturday pickup window. Fridays begin at 4 a.m. and often turn into a 20-22 hour workday to ensure every order is ready.
Traffic diverted past the bakery because of nearby road construction has helped introduce new customers to the stand. Coumos agreed, saying, "Costco traffic is like a really big win for us."
The bakery's chocolate chip cookies are among its most popular offerings. Coumos described them as fan favorites topped with sea salt. Other menu items rotate regularly and have included sugar cookies, brownies, Reese's cookies, M&M cookies, kitchen sink cookies, pumpkin coffee cake, and apple fritter focaccia. The changing menu allows the bakery to feature seasonal and holiday themed baked goods throughout the year.
Customers visiting the bakery are encouraged to scan a QR code on the business card, which links to the bakery's website and social media accounts for ordering and updates. Walk up customers can purchase available items, while preorder customers simply locate their alphabetized bags during the pickup window. Coumos accepts electronic payments along with cash.
Coumos also said local law enforcement officers have become regular customers. "We actually have so many law enforcement regulars. They love it. And we love them," she said.
As a lasting effect of the pandemic, consumers have increasingly sought out unique local businesses and specialty products, fueling demand for small, community-focused shops.
The convenience of familiar digital payment options, combined with Flour Child Microbakery's homemade offerings and rotating specialty menu, has created an experience that resonates with customers. Coumos described the streamlined process with one simple statement; "It's so easy."
